Zucchini Muffins
Ingredients
- 1 3/4 cups soft white wheat flour (or other whole grain flour)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- pinch of ground cloves
- 1/2 cup coconut oil (or your preferred oil)
- 3/4 cup (or less) sugar
- 1/2 cup (or less) brown sugar
- 1 cup shredded zucchini
- 1 tsp vanilla extract (try making your own!)
- 1 egg
- 3/4 cup applesauce (unsweetened)
Instructions
- Preheat oven to 350 F.
- Line a muffin tray with paper liners.
- Combine dry ingredients: In a large bowl, whisk dry ingredients (flour, baking powder, soda, salt, and spices) in a large mixing bowl.
- Combine liquid ingredients: In another bowl, combine oil and sugars, mixing well. Then add zucchini, vanilla, egg, and applesauce.
- Add liquid mixture to dry mixture, and mix until just barely combined. Don’t over-mix or it will affect the texture.
- Scoop batter into muffin tin, filling almost to the top of each cup.
- Bake about 20 minutes, or until the muffin edges and tops are lightly brown.
- Let cool in muffin tray for 5 minutes, then remove and place on a cooling rack.
