Cilantro Lime Chickpea Salad
Ingredients
- 4 cups soaked chickpeas (-2 cans), drained and rinsed
- 4 loosely packed cups fresh spinach
- $\frac{1}{2}$ onion, chopped small
- juice from 4 limes
- 1 bunch cilantro (about 1 loosely packed cup)
- 3 Tbsp sugar (maybe less)
- 2 Tbsp Dijon mustard
- 2 cloves garlic, finely minced or grated
- $\frac{1}{2}$ Tbsp chili powder
- $\frac{1}{2}$ cup olive oil
Directions
- Chop the spinach very finely.
- Add spinach, chickpeas and onion to a large bowl.
- In a food processor, mix lime juice, cilantro, sugar, mustard, garlic, chili powder, and olive oil.
- Pour over the chickpea mixture; stir to combine.
- Add salt and pepper to taste.
- To let the flavors mix, let sit about 10 minutes on the counter, or overnight in the fridge.
