Cilantro Lime Chickpea Salad

Ingredients

  • 4 cups soaked chickpeas (-2 cans), drained and rinsed
  • 4 loosely packed cups fresh spinach
  • $\frac{1}{2}$ onion, chopped small
  • juice from 4 limes
  • 1 bunch cilantro (about 1 loosely packed cup)
  • 3 Tbsp sugar (maybe less)
  • 2 Tbsp Dijon mustard
  • 2 cloves garlic, finely minced or grated
  • $\frac{1}{2}$ Tbsp chili powder
  • $\frac{1}{2}$ cup olive oil

Directions

  1. Chop the spinach very finely.
  2. Add spinach, chickpeas and onion to a large bowl.
  3. In a food processor, mix lime juice, cilantro, sugar, mustard, garlic, chili powder, and olive oil.
  4. Pour over the chickpea mixture; stir to combine.
  5. Add salt and pepper to taste.
  6. To let the flavors mix, let sit about 10 minutes on the counter, or overnight in the fridge.
